We are seeking a highly professional and skilled Executive Chef join our team at dnata Catering. As the Executive Chef, you will be responsible for leading our culinary team and ensuring the highest standards of food quality and presentation in our in-flight catering operations. You Will

  • Ensure full compliance with the company's Occupational Health and Safety system, prioritizing the safety and well-being of our team members and customers.
  • Lead and develop the Production team, including recruitment, orientation, training, and performance management.
  • Manage matters of poor performance and misconduct, conducting root cause analysis and implementing necessary corrective actions.
  • Prepare budgets and manage costs to reflect operating forecasts, including staff payroll, equipment, and food material utilization.
  • Plan and manage daily operations, including staff rosters, production plans, and food preparation and service.
  • Maintain optimal food stock levels to meet quantity and quality requirements.
  • Ensure food production is fully compliant with client requirements and investigate and resolve client and passenger complaints.
  • Ensure compliance with the company's food safety and quality management system requirements and address any non-conformances.
  • Collaborate with the Corporate Executive Chef - Center of Excellence to continuously improve the menu offering, participating in menu design and development as a senior culinary advisor.
  • Review existing menus and initiate process improvements to achieve cost savings and efficiencies.
  • Manage new product implementation projects and cost-saving initiatives to achieve business objectives.
  • Work with suppliers on packaging, component, and presentation concepts, ensuring product quality and innovation.

This salary range and is influenced by the level of experience. When calculating the base pay, we take into account various factors such as location, qualifications, training, and experience as part of the overall compensation package. $110K - $137K

 

 

You Have

EDUCATION: Bachelor’s Degree Preferred; Associate degree (A.A.) or a minimum of Ten (10) plus years of culinary experience leading a kitchen in high-end establishments.

 

  REQUIREMENTS

  • Expert culinary skills with experience in Michelin-starred restaurants or highly reputable institutions is
  •  
  • Wide knowledge of raw materials (foods) from around the world.
  • Experience in creating balanced new menus and exquisite culinary art (taste, creativity, and plating).
  • Ability to interact with clients and excellent interpersonal skills.
  • Previous experience in high-volume food production and airline catering is preferred.
  • Prior experience working within a MEDINA Quality Food Assurance kitchen.
  • Strong knowledge of international cuisine and process improvements.
  • Computer competent with Microsoft Office.
  • Valid food handler's certificate or equivalent.
  • Ability to read and write in English.

 

     QUALIFICATIONS

  • Culinary or equivalent tertiary qualification.
  • Experience in large-scale fine dining banqueting, sit-down, and buffet settings (500 pax plus).
  • Previous experience in a senior culinary role in a premium service environment.
  • High standards of professional conduct with excellent communication and presentation skills.
  • Strong results orientation and attention to detail.
  • Excellent people management skills with experience leading and managing a large multinational team.
  • Proven ability to achieve compliance with food safety and quality systems.
  • Ability to plan, multitask, and work under strict time constraints.
  • Proactive mindset focused on waste elimination and team effectiveness.
  • Ability to engage and align others towards common goals.
  • Demonstrated track record of meeting budget targets and successful menu development.
  • Proficiency in using the Microsoft Office Suite.

 

Intellectual/Social demands:

While performing the essential functions of this job, the employee is continuously asked to multi-task under time limits.  Position requires constant attention to precise details and accuracy of specified standards including following simple to complex (more than 3 steps) instructions, and concentration which frequently extends beyond 30 minutes at a time. This position also requires constant attendance and punctuality - Is consistently at work and on time. Follows instructions, responds to management direction; Takes responsibility for own actions; Completes tasks on time or notifies appropriate person with an alternate plan. Physical demands:

While performing the duties of this job, the employee is regularly required to stand, walk; reach with hands and arms and stoop, kneel, or crouch. The employee must regularly lift and /or move up to 30 pounds. Safety and Security - Observes safety and security procedures; Reports potentially unsafe conditions; Use equipment and materials properly.

 

Work environment:

The essential functions of this position are performed indoors. The noise level in the work environment can range from minimal to loud.
